    8 potatoes cut lengthwise into quarters
    1/2 cup lemon juice
    1/4 cup olive oil
    salt, pepper, dried greek oregeno (to taste)


preheat oven to 500 F. I don't peel potatoes unless the skin is bad because I don't want to waste all that good nutriton so I just scrub and quarter lengthwise pat dry. arrange in single layer in large baking dish. (I think mine is 12x17)whisk together lemon juice olive oil and spices pour over potatoes and using fingers mix it up to thoroughly and evenly coat potatoes arrange in single layer . Add about one cup water at edge do not want to wash away spices. Bake for about 40 min potatoes should be tender with crisp golden brown. serve with tzaziki
