    2 lbs. of butternut squash (peeled, and cubed)
    4.5 cups of vegetable broth or stock
    1 tsp dried thyme
    4 cloves of garlic
    2-1/4 cups of chopped sweet onion


Recipe for Red Pepper Coulis is:


Chop onions. Mince garlic. Peel, seed and cube squash. Saute onions in large pot over med high heat until tender (about 12 minutes). Add garlic for 1 minute. Add squash and broth and bring to a boil. Reduce heat, cover and simmer until squash is soft. (about 40 minutes). Cool slightly. Puree soup in batches in blender until smooth. Return puree to pot add 1/2 tsp thyme, simmer 3 minutes, season with salt and pepper. Swirl 1 TBS Red Pepper Coulis into each bowl, sprinkle with thyme and serve.

Serving Size: 1 cup servings
