Good for leftovers at suppertime. Good for leftovers at suppertime.
Number of Servings: 1

1/2 cup Stove Top Stuffing Mix
    4 large Eggs
3 oz. Butterball Carved Chicken Breast Strips Fully Cooked / Skinless Grilled (or whatever leftover meat you may have, or can use sausage)
    1 cup shredded Cheddar Cheese
    1 cup raw Onions, chopped
1 tbsp Country Crock or spray for frying pan

Delicious for any meal, any time of day, great use for leftovers.

Spray pan with non-stick spray or use country crock to coat it, add chopped onions, (then any other veggies you may wish to put into the meal). After allowing it to cook for a short time, add the dressing.

Chop up the meat, add to the dressing and onions.

Break the eggs into a bowl, stirring them and pour them over the mixture in the pan and stir.

Add cheese to the top of the mixture in pan after it is cooked well and the eggs are done.

When the cheese is melted, the meal is complete. Serve as is, or with toast on the side, if desired.

Serving Size: Makes about 8-1 cup servings.

Number of Servings: 1
