Ingredients

    2 Tbsp Canola Oil
    50 gram(s) Red Curry Paste
    2 Boneless, Skinless, Chicken Breasts
    Chinese eggplant, fresh, 1 sliced
    Peppers, sweet, red, fresh, 1 cup, sliced
    Bell pepper - green, fresh, 1 cup, sliced
    400 ml can light Coconut Milk
    1 Tbsp Fish Sauce

Directions

Heat oil and add red curry paste. Cook for 1 minute. Add coconut milk and stir until paste is dissolved. Add chicken and cook until no longer pink. Add fish sauce and bring to a boil. Add veggies and lower heat. Simmer for 10 minutes. Remove from heat and serve over rice.

Serving Size: makes 4 servings
