    1 TBS olive oil

    10 ounces fresh spinach
    6 cups chopped fresh mushrooms
    1 cup chopped onions

    1 large egg
    1 cup Egg Beaters
    Salt & Pepper to taste


Chop spinach and onions.
Saute in olive oil.

Mix all ingredients well.

Bake in well greased pan at 325 until set.
