    Cauliflower, raw, 1 cup
    Mozzarella Cheese, part skim milk, 8 oz
    Egg, fresh, 1 large
    Oregano, dried, 1 tbsp
    Garlic, minced 1/2 tsp
    Salt, 1/2 tsp


Toppings will need to be precooked since you will be only broiling it for a few minutes to heat it up and melt the cheese. (Broil on high for approximately 3-4 minutes.)


Remove stems and leaves from 1 head of cauliflower. Shred the florets with a large holed grater. Place the "riced" cauliflower in a microwave safe bowl and microwave for 8 minutes (may need to adjust according to your microwave.) No need to add any water. Ths will yield more than you need for one crust. The leftover can be refrigerated and used later as a replacement for rice, as well as another crust.
Preheat oven to 450 degrees. Spray pizza or cookie sheet with non-stick spray. In a medium bowl, stir together 1 cup caulflower, beaten egg and mozzarella. Add oregano, minced garlic and salt and mix well. Transfer the misture to your cookie sheet and pat out a 9" round. Bake at 450 for 15 minutes. Remove from oven and let cool a while. This helps to make the crust more solid.
