Ingredients

1 cup Shortening
2 Large Eggs
1 cup Rice Flour
1 cup Flax Meal
1/2 cup Honey
1 cup Light Brown Sugar
1/2 cup Cocoa
1 3.9 ounce box Instant Chocolate Pudding
1/2 tsp Salt
1 tsp Baking Soda
Tips
Cooking time depends on how many cookies per cookie sheet. It sounds like a long time adding up the time. But 11 minutes average per batch. I only put one cookie sheet in at a time.
Directions
Pre heat oven to 350 degrees. In medium mixing bowl mix all ingredients. I put everything in one bowl and mixed well. I used a regular eating spoon to scoop up dough, I'd say about a tbsp each cookie. I kind of rounded them a bit and put on ungreased cookie sheets. Bake between 10 and 12 minutes. At 12 minutes, still soft, closer to 10=more chewy. Let me know how yours turned out!
