Number of Servings: 12

Ingredients

    16 oz lean ground beef
    2 - 12 oz cans yellow sweet corn
    2 - 12oz cans red beans or kidney beans
    1 - 6oz can Tomato Paste
    2 - 10 oz cans Rotel Diced Tomatoes & Green Chillis
    2 - cups chopped/diced White Onion
    1 - pkg Old El Paso Taco seasoning mix (40% less sodium)
    1 - pkg Hidden Valley Ranch Dressing mix (Original)
    12 oz water

Tips

You also may want to have these items on hand to use as a topper for the soup... use low calorie tortilla chips, low fat shredded cheese & low fat or fat free sour cream. After putting the soup in a bowl add broken chips, cheese and sour cream to spruce it up.. But as a reminder.. the additional calories are not included in the listed nutritional values of this soup.


Directions

in a 5 quart sauce pan, over medium heat, add hamburger and chopped onions. Brown hamburger with onions until cooked. Open all Cans of Corn, Beans, Rotel Tomatoes & Green Chilies and the Tomato Paste. Pour all of the contents from all of the cans into the Hamburger Mixture in pan, the order does not matter. Then add 12 oz's of water to the mixture, (you can use the corn can to measure), and stir until mixture is well blended. Open the Taco Seasoning and Ranch Dressing Mixes and pour all of the contents of each packet into your soup. Stir and mix well. Bring the soup to a boil over medium heat stirring occasionally, after boil is reached then turn soup down to low and let simmer for 30 minutes stirring every 10 minutes. Remove from heat, serve and enjoy.

    This Was Super good!! I was a hit (or rather the soup was) at a potluck gathering this weekend.. It was actually gone in the 1st 30 mins.. Lucky I got any!! I've tried other types of recipes but this one was the best so far! Thanks for sharing. - 2/24/13
