Ingredients

1/4 cup butter
1/8 cup light brown sugar
1/8 cup white sugar
1 small egg
1/2 tsp vanilla
3/4 cup Pamela's Ultimate Baking and Pancake Mix, gluten free
3/4 cup semi-sweet mini chocolate chips, Enjoy Life dairy, soy and nut free
Directions
Preheat oven to 350. Cream butter and sugar, add egg and vanilla, then beat together. Add Pamela's Mix and chocolate chips, mix thoroughly. Place scoops of dough (about 1/2 TBSP) on a lightly greased cookie sheet or on parchment paper. Flatten. Bake 10-15 minutes until edges start to brown. Let cookies cool slightly and remove from cookie sheet with a spatula.
