    2 tsp canola oil
    3/4 lb pork tenderloin or any lean pork, cut into 1/2 inch chunks
    1/2 cup bell pepper, in strips
    one cup onion, diced
    1/2 cup carrots, shoestring strips
    1 cup pineapple chunks
    1/2 jalapeno pepper, small dice
    3 garlic gloves, diced
    1 inch piece of ginger, grated
    1/2 cup chicken broth, low sodium
    3/4 cup pineapple juice
    1 tbsp apple cider vinegar
    3 tbsp soy sauce, low sodium
    1 tbsp brown sugar
    2 tbsp cornstarch
    1 tsp sesame oil
    green onion, chopped (optional)
    1 1/2 cups cooked long grain white rice


Over medium low heat, saute onion and bell pepper in canola oil.
Add pork and saute slowly until browned
Stir in carrots, ginger,garlic, and jalapeno pepper; continue simmering for 5 minutes.
In bowl, stir together chicken broth, pineapple juice, soy sauce, vinegar, and sugar. Add cornstarch and stir well.
Add this mixture to pork and vegetables and simmer until slightly thickened.
Just before removing from heat, stir in sesame oil.

Serve over rice.
Top with chopped green onions if desired.
