    2/3 c plain yogurt
    1 small garlic clove, pressed
    1 teaspoon chopped fresh mint

    1 medium onion
    2 t. olive oil
    1 red bell pepper cubed
    2 t. ground coriander
    1 t. cumin
    1 1/2 c. canned chickpeas
    10 oz pinach, coarsely chopped
    2 T fresh lemon juice salt and pepper to taste

    cooked orzo (4 ounces)


Combine sauce ingredients in a bowl and set aside to blend flavors.

In a skillet saute the ontions in the oil on medium heat until softened (6-8 minutes). Add the bell pepper and spices and saute for 2-3 minutes. Stir in chickpeas and 1/4 cup of water (or liquid from beans) - simmer 5 minutes. Add spinach and cook, stirring 2-3 minutes until wilted but still bright. Stir in lemon juice, salt and pepper. Serve over orzo, topped with yogurt sauce.
