    Lemon Peel, 1.5 tbsp (remove)
    *Lemon Juice, 1.5 lemon yields (remove)
    Chobani 2% Plain Greek Yogurt (8 oz), 1 serving (remove)
    Applesauce, unsweetened, .33 cup (remove)
    Olive Oil, 2 tbsp (remove)
    Flaxseed, 1 tbsp (remove)
    Egg, fresh, 2 large (remove)
    Salt, .5 tsp (remove)
    Granulated Sugar, .33 cup (remove)
    Honey, 2 tbsp (remove)
    Baking Powder, 3.5 tsp (remove)
    Yellow Cornmeal, 1 cup (remove)
    Flour, whole grain, 1 cup (remove)


Eat plain, or make a glaze with powdered sugar and lemon juice OR a chocolate ganache with lemon or orange zest. Yum!


Wisk together all wet ingredients. Sift/Stir together all dry ingredients (including sugar). Gently fold wet ingredients into dry.

Pour into a greased/dusted 9-inch cake pan with a parchment paper round in the bottom. Bake at 350 for 25-30 minutes.
