Ingredients

    1c Dry Black-eyed Peas, cooked with salt
    1c Dry Pinto Beans, cooked with salt
    2 cans sweet corn
    1 lg egg
    4tsp cumin
    3tsp cayenne pepper

Directions

1. Mash beans together in large bowl.

2. Mix in cumin, cayenne pepper and corn

3. Toast and crumble one bread roll. (made from Fast, Easy Yeast Bread recipe: http://recipes.sparkpeople.com/recipe-detail.asp?recipe=2405923) Mix bread crumbs into bean mixture.

4. Whisk egg and add to bean mixture.

5. Form into patties and cook for each side for 3-4 minutes, or until browned.

6. Serve on rolls
