    1-1/2 cups All-Purpose White Flour
    1/2 cup Whole Wheat Flour
    1 TBS. Flax Seed Meal (ground flax)
    1/2 tsp. Baking Soda
    1-1/2 tsp. Baking Powder
    1/4 tsp. ground cinnamon
    1/8 tsp. ground nutmeg
    2 large fresh eggs
    1-1/2 cups fresh, mashed banana
    1/2 cup Granulated Sugar
    1/4 cup Vegetable Oil
    1/4 cup unsweetened apple sauce
    1/4 cup coursely chopped pecans


It helps to lightly grease the muffin cups if you are using them as well, as this recipe has less fat than normal muffins. Otherwise, they stick to the cup!


Combine all dry ingredients (except the pecans) in a large mixing bowl. Combine all wet ingredients in smaller bowl. Add wet ingredients to dry ingredients and stir until just combined. Spoon into lightly grease tins or cups, top with chopped pecans, and bake at 400 degrees for 12-15 minutes.
