    16oz liquid egg whites
    6oz canadian bacon
    6 oz lite shredded mozzarella
    12T pico de gallo (more for taste)
    2c cooked quinoa (measure cooked)


Preheat oven to 350
Mix ingredients together
Pour into greased or lined jumbo muffin tin
Bake for approx 35 minutes or until eggs are well set

Serving Size: 6 jumbo muffins
