Number of Servings: 12


    1 1/2 cups whole wheat flour
    1 tsp baking soda
    1 tsp baking powder
    1/2 tsp cinnamon
    1/2 tsp salt
    1/2 tsp nutmeg
    1/8 tsp ginger
    1/8 tsp allspice
    1/2 cup brown sugar
    3 eggs
    1/2 cup buttermilk
    1/2 tsp vanilla
    1/3 cup oil
    1 1/2 cups grated carrots
    1 cup raisins


I prefer it with Golden Raisins.


Mix all dry ingredients together and then mix all wet ingredients in a seperate bowl. Combine the contents of the two bowls and fill one dozen muffin tins sprayed well with Pam. Bake at 400 F for 18-20 minutes.
