Introduction

Number of Servings: 30

Ingredients

    3 large potatoes-cooked and mashed
    1 medium onion-finely chopped
    1 green chilli
    1 1/2 cup frozen peas
    4 cloves garlic
    1/2 tsp coriander seeds
    1/2 tsp coriander
    1/2 tsp turmeric
    1/2 tsp garam masala
    2 tbsp olive oil

Directions

Peel, cook and mash your potatoes. Set aside.

In large frying pan, heat olive oil, add coriander seeds, garlic, green chilli. Heat for a minute then add the onion. Sautee until onions are lightly brown. Add coriander, turmeric, and garam masala. Add frozen peas, then mashed potatoes. Cook and stir well, until peas are done.

Remove from heat and wait until cooled before filling.

Using the Phyllo Dough:

Open up on counter, cover unused portion with a towel.

Take one sheet and cut it into three strips, going lengthwise. Put other two portions under the towel until use. Take third sheet and brush with melted butter. Put a spoonful of filling on one end and fold the edge of the dough over so it makes a triangle. Fold again, to make another triangle. Keep folding the rectangle into triangles until you reach the end. Brush lightly with melted butter.

Put on a parchment paper lined sheet and bake in the oven at 350 for 20-25 minutes, flipping half way through to ensure even browning.
