    2 cups organic Spelt Kernels (VITA-SPELT)
    4-1/2 cups water
    3 tablespoons sodium free granulated
    chicken bullion
    1/4 cup white vinegar
    2 chopped large fresh tomatoes
    2 chopped large sweet onions
    4 large garlic cloves sliced thin
    1 tablespoon oilive oil
    3 tablespoons capers
    15 thinly sliced large canned black olives


Place spelt in food processor or blender until most kernels are broken into pieces to consistency of bulgur. Boil water and vinegar. Add splet, bring back to boil then simmer covered for 1 hour or until liquid is absorbed.

Saute onions and garlic in oilive oil on low heat until just soft. Combine sauted oniopns,garlic tomatoes, olives, capers and cooked hot spelt in large bowl and serve immediatley.

Makes 12 1/2 cup servings 160 caloreis each.

Will keep refridgerated for 3 days and gets better each day.
