Ingredients

    1 tbsp olive oil
    2 onions, chopped
    2 carrots, grated
    1 28-oz can diced tomatoes
    1 zucchini grated (optional)
    1 19-oz can lentils, drained and rinsed


Tips

Note: just about any kind of veggies can be added to this recipe. But beware, dark green vegetables, like spinach or green pepper will darken the sauce...


Directions

sauté the onions in the olive oil until tender. Add the carrots, tomatoes and zucchini (if using). Simmer until the vegetables are tender. Add the lentils and purée with immersion blender until smooth to your liking.
