    enchilada sauce

Cook squash according to package directions; drain and set aside. Heat oil in a medium skillet or Dutch oven. Cook onion and garlic about 5 minutes or until soft. Add squash, mixing well almost to a mashed consistency. Add beans, chile powder, red pepper, and salt, tossing well. Spread cup enchilada sauce in a lightly greased 9x9" dish. Add a layer of tortillas, cutting to fit, if necessary. Add a layer of bean filling, and cup cheese. Repeat for a total of 3 layers of enchilada sauce, tortillas, bean filling, and cheese, topping with 1 cup cheese. Cover and bake at 375 about 20-25 minutes; uncover and bake 5 minutes or until cheese is melted and bubbly.
