    1 c. flour
    1/3 tsp. baking powder
    1/3 tsp. baking soda
    1/6 tsp. salt
    1/3 tsp. cinnamon
    1 egg
    1/2 c. sugar
    1 tsp. vanilla
    1/3 c. olive oil
    1 c. grated zucchini
    1 c. crushed pineapple, drained


Sift together dry ingredients (flour-cinnamon).
Combine eggs, sugar, vanilla, and oil.
Add zucchini to the wet mixture.
Add the wet mix to the dry, mixing just until moist.
Stir in the pineapple.
Bake at 350 for 30 minutes or until golden brown and toothpick comes out clean.
