    4 6-oz. boneless, skinless chicken breasts
    2 tblsp butter, divided
    2 medium onions, peeled and cut in quarters
    4 stalks celery, ends removed
    4 carrots, peeled
    1 tblsp. flour
    1 tsp. each: seasoned salt, pepper, thyme, and parsley
    2 cups homemade chicken stock
    2 cups Bisquick
    1 cup milk


The dumplings will look huge and soft when you put the dough on the chicken, but they will cook completely and be "pillowy" when done!


Melt 1 tblsp. butter in non-stick pan on medium heat. Add chicken and brown on both sides. Cut carrots and celery into 1-inch pieces. Remove chicken to plate; add rest of butter and the vegetables. Cook until onion quarters break up and add seasonings. Cook another 5-6 minutes. Add flour and stir until all the flour is mixed in well. Cook for 1 minute and add chicken stock. Bring to boil and reduce heat to simmer.Add chicken on top of veggies. Mix together Bisquick and milk until all lumps smooth out. Plop dumpling dough on top of chicken and cook, uncovered, for 12 minutes. Cover and cook another 12 minutes. Pull dumpling off each piece of chicken and serve alongside with veggies.
