Ingredients

    1 bunch fresh broccoli (may substitute 1 lb. fresh asparagus)
    1 lb. chicken breast no skin cut into strips
    2 C. low fat cheddar or colby cheese
    1/2 cup lite mayonaise
    1 Can Campbells cream of Chicken soup (98% fat free)
    juice from 1 lemon
    1/2 C unseasoned bread crumbs

Directions

Steam broccoli flowerets until tender. Place in bottom of 8 X 12 baking pan sprayed with butter spray. Cover with chicken strips. Mix soup, Mayonaise and lemon juice until smooth. Add 1 3/4 C. cheese and spread over chicken . Sprinkle breadcrumbs and cheese over top. Cover and bake for 45 minutes at 350 degrees. Remove lid and continue to bake for 15 minutes until bubbly.
