The vegan answer to chicken noodle! The vegan answer to chicken noodle!
Number of Servings: 4


    Olive Oil, 1 tbsp
    Half a cooking onion, finely chopped
    1 stalk of celery (including leaves), finely chopped
    1 raw carrot, finely shopped or thinly sliced
    1 tsp grated ginger
    Chili pepper flakes, to taste
    Tahini, 4 tbsp
    Water, tap, 2 cups

    Soba Noodles, 45 grams
    Water, tap, 4 cups

    Miso, 3 heaping tablespoons (I prefer brown rice miso)
    2 leaves of kale, finely chopped


This can be make fat free but sauteeing in water instead of oil, and omitting tahini.

It can be gluten free if gluten-free soba is found, or noodles are omitted.


Heat the olive oil on medium heat, add onion, carrot and celery and saute until onions are clear.

In a separate pot, bring 2 cups of water to a boil. Add the soba noodles.

Add the pepper flakes, ginger and tahini to the vegetables and stir until well mixed and everything is coated in tahini. Slowly add 2 cups of water, stirring constantly. DO NOT BOIL! (The tahini will separate).

When noodles are cooked, add noodles, and their cooking water, to the first pot. Stir in the kale and the miso and continue heating on low-medium until kale reaches desired texture (I like to eat mine right away).
