Ingredients

    1/2 lb. dry kidney beans
    2 quarts homemade chicken stock
    2 cubes chicken bouillon
    10 oz. roast chicken, skin removed and chopped or shredded
    1 medium onion, chopped
    2 stalks celery, chopped
    2 cups sliced carrots
    1 cup chopped spinach
    1 cup dry quinoa
    1/4 tsp. thyme leaves
    dash pepper

Directions

Soak beans overnight or use "fast soak" method listed on package.

In large stock pot, combine chicken stock, bouillon, chicken, beans, onion, celery, thyme and pepper. Bring to a boil then simmer over low heat until beans soften, about an hour. Add carrots and spinach and simmer for another 30 minutes. Add quinoa and simmer for 15 more minutes then serve. Makes 12 servings.
