    Eggplant, fresh, 1 eggplant, unpeeled (approx 1-1/4 lb
    *Happy Harvest Diced Tomatoes, 3.5 cup
    *Aldis spaghetti sauce w/ mushrooms, 3 cup
    *HAPPY FARMS Shredded Mozzerella Cheese, 1 cup *provolone cheese slices - publix brand 4 slices
    *Reggano Parmesan & Romano Grated Cheese (from Aldi's), (1/2 cup)


Spread 1 cup of Regganno Sauce into bottom of 13x9 baking pan. Slice Eggplant into 1/2 inch circles. Layer half of the eggplant into pan. Drain Diced Tomatoes and spoon 1/2 over the Eggplant. Add another cup of Spaghetti Sauce. Spread 1/2 cup of Mozzerella. Sprinkle half of Parmesan. Spread 1 cup Spaghetti Sauce. Repeat Eggplant, Diced Tomatoes, Spaghetti Sauce. Cover pan and place in oven at 375 degrees for 1 hour. uncover. Cut Provolone slices in half and place on top, remainder of Mozzerella and finally, remainder of Parmesan/Romano. Return to oven until cheeses are melted. Let cool 5-10 minutes and enjoy!
