A heart worming, low calorie, veggie stew. A heart worming, low calorie, veggie stew.

    Olive oil - 3 tbsp
    Onion chopped- 3 big
    Radishes - 1 finelly chopped
    Carots - 1 big finelly chopped
    Courgette - 0.5 a big one, chopped
    Mushrooms fresh sliced- 150 g
    Salt - 2 tsp
    Curry, Safron, Jamaican pepp er - 1 tsp each
    1 maggi cube vegetable
    30g shredded cheese
    2 big eggs
    1 can peeled tomatoes
    6 cups bread (leftover) cubbed
    1 cup milk
    1 cup water (or beer)


I did this after a birthday, to make use of the crusts of the loaf of bread I used to make the kiddie sandwiches!


In a pan put the olive oil, salt, maggi, and all the chopped vegetables. Cook the veggies until soft, add cann of tomatoes and let simmer a bit longer.. Add milk and water (or beer), and add bread slowly.. envolving everything... After the bread has absorbed the veggie broth turn heat off and add the cheese, and eggs, mixing well. The heat will cook the eggs! Sirv with salad!
