Ingredients

    Double the measurements for current recipe.


    1 pound ground chicken
    1 tablespoon oil
    1 onion, diced
    1/2 cup celery, sliced
    1/2 cup carrots, diced
    2 cloves garlic, chopped
    1 teaspoon cumin, toasted and ground
    1 cup beer or chicken broth
    1 (15 ounce) can diced tomatoes
    1 (15 ounce) can cannellini beans, drained and rinsed
    1 teaspoon paprika
    1/2 teaspoon oregano
    1/4 teaspoon cayenne
    1/2 cup hot sauce (or to taste)
    1 can of sweet corn
    salt and pepper to taste
    crumbled blue cheese (or feta) to taste

Directions

Throw beans/tomatoes/chilis/hot sauce into the crock pot. Dice up all the veggies, throw into hot pan with hot oil. soften with the spices till aromatic. Throw into crock pot. Deglaze pan with beer. Place in crock pot. stir, taste, adjust. Add chicken whole. Before serving, shred the chicken and add corn.
