    --Greens, Baby Kale, Organic (Earthbound) Serving (1 per container): 3oz = 2cup = 85g, rinsed and stems removed
    --Black eyed peas, organic, canned 15 oz./425g (Eden), 1.75 cup (the whole can)
    --Onions, raw, 3 medium (2-1/2" dia)
    --Butter, unsalted, .5 stick
    --Pacific Natural Foods Organic French Onion Soup, 1 cup, 2.5 serving (the whole box)
    --Paprika, .5 tsp
    --Frank's Hot Sauce, a couple of dashes, to taste
    --Cumin, ground .5 tsp
    --Nutmeg, ground, .5 tsp


Use a nutmeg grinder and fresh whole nutmeg.


Melt the butter in a large stock/soup pot on low heat. Add chopped onion (not diced). Stir until translucent. Add entire box of Pacific Organic French Onion Soup. Add kale, rinsed and stems removed. Cover and simmer for 10-15 minutes. Add seasonings and rinsed, drained black-eyed peas. Turn heat down if necessary to prevent boiling. Cover and cook for additional 20 minutes.
