This is a Mexican casserole that is really easy to throw together. This is a Mexican casserole that is really easy to throw together.
Number of Servings: 6


    1 lb Ground Turkey 93% lean
    10 oz of salsa of your choice
    1 med can sweet corn
    1 small can sliced black olives
    1 can black beans
    1 cup cottage cheese
    1 cup sour cream
    1 cup shredded cheese of choice
    1 bag tortilla chips


You can change this up however you want to make different variations of this casserole.


Brown the ground turkey. In the meantime open the cans, drain the corn and olives, and drain and rinse the black beans. Once meat is cooked add salsa, corn, black olives, and black beans and mix well.

Mix cottage cheese and sour cream together in a dish.

Spray a casserole or cake pan with cooking spray and spread out tortilla chips along the bottom. Put a layer of meat mixture over the chips them top with half cottage cheese mixture, then repeat again with the remaining meat and cottage cheese mixtures. Top with shredded cheese.

Bake at 375 for 30 to 45 minutes and serve with tortillas or tortilla chips.
