Introduction

Ingredients

    1 1/4 C whole whet pastry flour (this makes a huge difference in texture)
    1 1/c cup whole oats (not 1 minute, not steel cut)
    1 tsp baking powder
    1/2 tsp baking soda
    1 tsp cinnamon
    1 C unsweetened applesauce
    2/3 C no fat greek yogurt
    1/3 C aguave or honey
    1 large egg (lightly beaten)
    1/2 cup blueberries
    1 ripe banana (mashed)

Tips

Mash the bananas really well. Do not over mix the batter.


Directions

Spray 12 cup muffin tin with non-stick spray (I used coconut oil spray) or use paper cases. In a large bown combine all dry ingredients. In a medium bowl combine applesauce, yogurt, aguave/honey, egg (lightly beaten. Make a well in dry ingredients and add applesauce mixture. Stir until just moist. Fold in blueberries and banana (mashed). Fill muffin cups to almost the top. Bake for 18-18 minutes.
