Number of Servings: 4


    1 pound ground sirloin
    1 cup cooked rice
    2 tbsp. chopped onion
    1 egg
    1 can (6 oz.) tomato paste, divided
    1 tsp. Italian seasoning
    Salt & pepper to taste
    1 can tomato soup (10 3/4 oz)
    1/4 cup non-fat milk
    1/4 cup water


Heat electric skillet to 300 degrees (can cook on stove top in regular skillet too).

Meanwhile, in large bowl combine beef, rice, onion, 1 Tbsp of the tomato paste, salt & pepper. Mix well with hands. Form into 16 meatballs.

Cook meatballs in electric skillet, turning as needed until browned.

Combine soup, remaining tomato paste, milk & water. Pour over meatballs. Cover & cook about 10 minutes.

Makes 4 servings

The cooked meatballs and sauce freeze well too.
Can make w/ ground turkey instead of beef and brown rice instead of white.
