    3oz pollock filet
    1 tbsp whole wheat flour
    1 dash salt
    1 dash pepper
    1 egg white
    2 tbsp plain bread crumbs
    2 tbsp panko


Season flour with a pinch of salt & pepper. Coat fish in flour, then egg white, then bread crumbs & panko mixed together. Coat a pan with nonstick spray & place fish. Bake at 450 for 8 min, flip & bake 8 more minutes.
