Ingredients

    Egg, fresh, 1 large
    Spinach, fresh, .5 cup
    Peppers, sweet, red, fresh, 1 medium
    Cheddar or Colby Cheese, Low Fat, .1 cup, shredded
    salt and pepper to taste

Tips

If you want you can wrap a piece of lean trukey or bacon around the cup prior to pouring in mixture for a non-vegetarian option, or family members. Can take breakfast on the go.


Directions

Mix all ingredients except the cheese together in a bowl and pour into pre sprayed muffin tins.
Once the mixture is in the muffin tins, sprinkle some cheese on each muffin.
Place in the oven on 375 for 20 minutes or until TOOTHPICK COMES OUT CLEAN.
