    Dry Beans, black, .75 cup
    Dry Beans, white, .75 cup
    Dry Beans, red kidney, .75 cup
    Sweet peppers (bell), 4 large (2 green and 2 colored)
    Olive Oil, 3 tbsp
    Yellow Onions 1 medium chopped
    Garlic, 4 cloves
    Chili powder, 1 tbsp
    Oregano, ground, 1 tbsp
    Cumin (ground), 2 tsp
    Red Ripe Tomatoes, 4 medium, chopped
    Cilantro (fresh), 1/3 cup chopped
    Green onions, 2 chopped
    Water 4 cup
    1 bay leaf
    Salt, 1.5 tsp (divided)


Rinse then soak the beans over night. Drain. Combine beans, 4 cups water, 1 bay leaf and 1/2 tsp salt in a large pot. Bring to a boil. Reduce heat and simmer about 70 minutes. Drain and set aside.

While beans are cooking...roast your peppers, skin and seed after cooled a bit. Cut into large chunks. Set aside.

In large pan, heat oil over medium heat. Add onion and saute about 6 minutes. Add garlic another minute. Add chili powder, oregano, cumin, red pepper flakes, and 1 tsp salt. cook another 1-2 minutes. Add chopped tomatoes, cilantro and beans. Heat through. Serve with 3/4 tbsp shredded cheese on tops and a sprinkling of chopped green onion.
