A delicious, light and refreshing dessert. It's low in fat and calories. A delicious, light and refreshing dessert. It's low in fat and calories.
Number of Servings: 15


    8 low fat grahams crackers
    8 oz. Neufchatel cheese
    1 c. skim milk
    2 T lemon juice
    1 small box instant vanilla pudding
    8 oz. lite cool whip
    1 can lite cherry pie filling
    3 T butter


Crush 8 graham crackers, set aside. Melt 3 T butter. Mix butter and graham crackers together and layer on bottom of 9x13 pan.

Beat the cream cheese until smooth. Add milk and lemon juice and beat until smooth. Stir in pudding mix, then fold in cool whip.

Spread cool whip mixture over graham crackers.

Top with lite cherry pie filling (or any other flavor). Refrigerate for 3 hours (or longer).

Cut into 20 squares just before serving.

Serving Size: Makes 20 bars, serving size is 1.
