Ingredients

    1 10 oz. package of frozen spinach, thawed and drained
    3/4 cup of trinity (onion, bell pepper, celery) seasoning blend
    1/2 cp. white or yellow onion, chopped
    2 tsp. minced garlic (heaping tsp.)
    1 cp fresh mushrooms (any kind) chopped
    10 eggs beaten or whipped with an immersion blender until smooth
    1/2 cup deli ham chopped
    1/4 cup cheddar cheese (shredded)
    2 tsp of butter, melted
    Salt and pepper to taste
    Cooking spray


Tips

Try not to overcook it or the eggs will get dry.


Directions

Thaw and drain frozen spinach. Spray a medium skillet or sautee pan with cooking spray. Add garlic, onions, and trinity. Cook on medium to high heat until onions are clear. Add drained spinach to skillet, mix ingredients, cook for about 5 minutes. Remove skillet from heat to let contents cool. Preheat oven to 350 degrees. Spray a 9X11 glass dish or baking pan with cooking spray. Set aside. Crack 10 eggs into a bowl. Beat or whip the eggs until smooth. Fold in the COOLED spinach mixture, the ham, the cheese, and the butter. Add some salt and pepper. Pour the egg mixture into 9X11 pan and bake in the oven for about 20 minutes or until the middle of the pan sets (doesn't jiggle). Cut into 12 pieces and enjoy.
