    Beef, tenderloin, 16 oz
    Shallots, 5 tbsp chopped
    Light Cream (coffee cream or table cream), .75 cup
    Whiskey, 4 fl oz
    Butter, salted, .5 stick
    Peppercorns, 2 tbsp.
    Vegetable Oil, 2 tbsp.
    Kosher salt, 1 tbsp.


Take 4 beef tenderloins and salt on both sides. Crush peppercorns in a mortar and pestel (or in a ziplock bag with a meat tenderizer) and press onto the surface of tenderloins. Sear on a hot pan until properly done, remove to a warm plate and cover with foil. In the same pan, add half the butter and sautee minced shallots until golden. Add whiskey and deglaze the pan (be careful as this may ignite). Cook 2-5 minutes until reduced. Add light cream and cook until reduced by half. Whisk in butter piece by piece.

Serve tenderloins with sauce.
