This is a great high protein spin on the miso soup we all know and love. This is a great high protein spin on the miso soup we all know and love.
Number of Servings: 3


    3 scallion
    10 grams wakame, or other, seaweed
    1 cup dried sliced shiitake mushrooms
    2 1/2 cups water
    1.5 tsp olive oil
    3 T Genmai, or other yellow-type, miso
    1/4 tsp crushed red pepper


Reconstitute seaweed in cold water. Reconstitute mushrooms in 12 oz hot water. Slice scallions thin. Dice tofu. Heat pan and add olive oil. Drain mushrooms, saving water. Sauté a couple minutes. Add miso and red pepper. Sauté one minute. Add strained mushroom water and additional water for a total of four cups. Bring to near boil. Slice seaweed. Add scallions, tofu, and seaweed. Simmer five minutes. Let stand additional five minutes and serve.
