    2 cups of Baby Spinach / Arugula mix (or 1 cup of each), well rinsed
    2 Tbsp Poppy Seed Dressing (Ken's Steakhouse Lite version is included in the nutritional content)
    1/2 of a red bell pepper, chopped
    1 small pear, chopped
    1/2 ounce of pecans (about 10 halves), crushed into bits
    Sprinkling of Gruyere Cheese, grated finely through a cheese grater (about 5 grams worth)


If you want to cut out 6 grams of fat, you can use a fat free poppy seed dressing.

A hard Swiss cheese would also work in place of Gruyere.


Toss the spinach, arugula, pears, red pepper, & pecans in a salad bowl with the dressing to coat everything well.

Top with a sprinkle of Gruyere cheese

Serving Size: Makes 1 salad
