Oatmeal Applesauce Muffins
1 cup rolled oats
1 cup 1% milk (plus 1 tbsp lemon juice- i.e buttermilk)
1 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2/3 cup brown sugar
1/2 cup applesauce
1 tsp vanilla
1 tsp cinnamon
1 meduim sized apple, diced (I used a Gala)
1.Place oats in a small bowl, pour in milk. Let sit for 15-25 minutes.
2.Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
3.In a large bowl, stir together whole wheat flour, baking powder, baking soda, cinnamon and brown sugar. Stir in oat/milk mixture, applesauce, diced apples, vanilla and egg; mix well. Pour batter into prepared muffin cups.
4.Bake in preheated oven for 15-20 minutes, until a toothpick inserted into center of muffin comes out clean.
You do not have to add the apples- I did for extra flavor. You can also add fresh berries or any other fruit that bakes well. I have also in the past cut the sugar if I find I am using a sweeter fruit, like berries when in season!
