Introduction

Ingredients

    No salt added chicken broth
    Blackeye peas, frozen
    Mirepoix Cajun Style blend, frozen
    Quinoa, uncooked
    Shrimp, raw or cooked
    Garlic clove
    Salt and pepper, spices to taste

Directions

Bring broth to boiling, and add peas and whole garlic clove. Boil for 20 minutes. Then, add quinoa and simmer for remaining 15-20 minutes. Add veggie mix until cooked through, adding salt and spices as desired. If needed, boil shrimp in another pot of water until they turn pink (then, remove shells if present). Add to other ingredients and mix well. Enjoy!
