Ingredients

    2 tsp olive oil
    1 garlic clove, minced
    2 cups chopped escarole
    1 medium tomato, diced
    Dash each salt and pepper

Directions

Heat oil in medium saucepan; add garlic and saute, being careful not to brown. Add escarole, tomato, salt, and pepper. Cover and simmer approcimately 15 min or until escarole is just tender.
