Introduction

These are very moist, tasty muffins. These are very moist, tasty muffins.
Number of Servings: 1

Ingredients

    1.5 C gluten-free flour
    .75 C flaxseed meal
    1 C applesauce (or plain yogurt)
    1tsp baking powder
    2 tsp baking soda
    2 tsp cinnamon
    2 tsp. pumpkin pie spice
    1 tsp ground ginger
    2 apples, shredded
    .75 C rice milk
    1 egg
    2 egg whites
    1 tsp. vanilla
    .5 C blueberries
    nonstick muffin tins (2)

Directions

Preheat oven to 350 degrees. Mix all dry ingredients together, except blueberries.
Combine eggs, milk, and vanilla and beat for 30 seconds.
Stir in applesauce and add all wet ingredients to dry ingredients. Fold in blueberries.
Place muffin liners in tins or make sure tins are nonstick or greased. Fill muffin tin cup 3/4 of the way full. Bake at 350 degrees for 15-20 minutes. Check center with toothpick. Toothpick should come out clean when done.

Serving Size: Makes 2 dozen muffins.
