Ingredients

    0.5 cups quinoa (rinsed)
    1 cup water

    1 cup cooked green beans (chopped finely)
    1 cup cooked or canned chickpeas
    1 cup red pepper diced fairly small
    1.5 oz feta cheese crumbled

    Dressing:
    2 TBSP tomato paste
    1.5 TBSP red wine vinegar
    1.5 TBSP olive oil
    0.75 TBSP honey
    .25 tsp each basil ,oregano and salt
    .10 tsp pepper
    a pinch of cayenne

Directions

Cook quinoa in 1 cup of water for 15 minutes. Yield is approx 1.25 cups.Let cool.
Add to other ingredients and mix in dressing



Serving Size: Makes 5 cups. 1.25 cups per serving
