Ingredients

4 tbsp extra virgin olive oil
1 cup spinach
1/4 c minced garlic
3 lbs chicken breast tenderloins (or chicken breasts pounded thin)
1 cup fresh mushrooms chopped
1 cup julienne sun dried tomatoes
5 leaves fresh basil chopped into thin strips
2 tbsp red pepper flakes
2 oz amaretto liqueur
salt and pepper to taste
Directions
Heat oil and garlic in skillet. Add spinach. Remove spinach when wilted. Set aside.
In the meantime: layer chopped mushrooms, tomatoes and basil on top of chicken. Sprinkle with red pepper and salt and pepper. Roll and secure with toothpick. Add chicken to oil/garlic and cook until brown (about 10 minutes).
In final two minutes, add amaretto to form a glaze. Cover and remove from heat for approximately 4 minutes to allow the chicken to soak up the amaretto. Top with wilted spinach and serve immediately.
