Ingredients

    3 tbsp Egg Beaters
    1/2 cup Egg Whites
    1/2 cup shredded cheddar cheese (this is up to you)
    2 slices of Jennie-O Turkey Bacon, chopped into bite-size pieces
    1/4 cup of baby spinach diced into bite-size pieces

Tips

This recipe can be modified to suit your individual likes. You can add different meats, cheeses and vegetables. I cut mine in two as this recipe makes enough for two.


Directions

Preheat oven to 350.
Spray small baking dish with cooking spray.
Cook the bacon as directed on packaging
While the bacon is cooking, I cooked mine in the oven to help with the fat content, dice up the spinach. In small bowl measure the Egg Beaters and add the spinach. When the bacon is done and cool, dice it and add to the spinach egg mixture. Wisk all ingredients together. Add salt and pepper to taste. Pour into prepared baking dish and top with shredded cheese. Cook for 30 minutes or until eggs are nice and fluffy. Serve immediately.
