Introduction

I love chips and queso, but the temptation to eat more than I should is always a problem. I solved that problem by creating this recipie which gives me the great flavors of queso with salsa, but allows me to control my portion and eat it as part of the meal, not to munch on until the meal arrives! Number of Servings: 6

Ingredients

    1.5 Cups of Rice (I used white, but you could substitute brown)
    1.5 Cups Chicken Broth
    1.5 Cups Water
    3 oz. Velveeta 2%
    .25 Onion chopped
    .5 Cups Pace Mild Picante Sauce
    Salt to taste (about .25 tsp)

Tips

You can substitute brown rice for the white to incorporate more whole grains. The salt can be eliminated too if you are watching your sodium.


Directions

Bring Chicken Broth and Water to a boil. Add rice and chopped onion. Cover and reduce heat. Simmer about 15 minutes or until almost all of the liquid is absorbed. Meanwhile, chop the velveeta into smaller pieces (about .5" square) to help it melt faster. When the rice is done, uncover and stir in velveeta, salsa, and salt. Stir until velveeta is fully melted and combined.

Serving Size: Makes 6 .5 Cup Servings
