    24 oz Fresh Crab Leg meat
    24 fresh mushrooms stems removed and hollowed out a bit to hold stuffing
    1 red bell peper (chopped)
    1 small vidalia onion (chopped)
    1 cup celery (chopped)
    2 cloves garlic (chopped)
    2 eggs
    1 cup bread crumbs
    1 tbsp smart balance
    9 slices of provolone cheese


Clean mushrroms, pull out stem and scrape out inside of mushrrom with a spoon to make room for the stuffing, save what you scrape out to put back into mixture.

Steam Fresh King Crab Legs and clean, break into small pieces.

Sautee Red peppers, onion and garlic in 1 Tbsp of Smart balance buttery spread.

Microwave celery in water for 2 minutes, untill softer but still firm.

mix inside of mushrroms, crab meat, bread crumbs, pepper onion garlic mixture ,eggs and drained celery together in large mixing bowl.

Stuff mushrooms with mixture
Bake 25 Minutes @ 350 or until mushrooms are still firm, but easily cut.

Remove from oven, break up slices of provolone and place on tops of mushrooms, return to the oven until cheese is melted and starts to brown on top.
