    1 T - Olive or Canola Oil
    1 ea - large onion, chopped
    1 T - Smart Balance Light Buttery spread
    1 cup - Mahatma Jasmine Rice
    2 cups - water
    2 tsp - Better than Bouillon stock starter


Heat oil in medium saucepan over medium heat. Add chopped onions and cook over medium heat until softened, golden. Add butter at this point, but you can also add it earlier while the onions are cooking, if you need extra moisture or if they are sticking to pan.

While the onions are cooking, add the bouillon to the water and mix well. Set aside.

When the onions are cooked through, add the rice and continue cooking over medium heat until rice has become lightly golden (just a couple minutes).

Add vegetable bouillon/water mixture and mix well into the rice/onion mixture. Bring to just a boil, then reduce to low heat and cover.

Continue to cook rice on low for about 10 minutes or until all liquid is absorbed and rice is tender crisp.

Serving Size: makes approx 4 - 3/4 cup servings
